Sarah “Sally” Cary was born into one of Virginia’s esteemed families; she was the eldest daughter of William Cary, and was the belle of the ball, eventually marrying George William Fairfax, from another prominent lineage. (She was George Washington’s sweetheart too.)

Her legend is remembered at The SALLY, the flagship restaurant of the renovated, iconic The Fairfax at Embassy Row. The dining establishment is outfitted with a marble bar with zinc accents, dark wood, and modern and vintage furnishings. Designer Rockwell Group’s work included incorporating custom elements—the lounge’s contemporary sofa in mohair and pillows with fabric by Kelly Wearstler, among them.

There’s a 100-strong wine wall, with 1989 Latour (available upon request). To pair? American-fusion small plates from French-trained executive chef Ricardo Planas, like lobster ceviche. “It features different combinations than most people are accustomed to,” he says. “I like to hear that guests are willing to extend their comfort zones.” Here?
